This year has gone by before I noticed it. Lots of things happened, some good, some sad. Tonight I will be celebrating the end of this year and welcoming the new year with all it's good and hopefully not too many sad things. I have lots of plans for this upcoming year and I feel like I am at a changing point in my life and that is good.
As promised here are the recipe's for the carrot cake and the soesjes tower.
Carrot cake(Dutch version) you can look HERE for some great ones in English!
Ingredienten:
4 eieren losgeklopt
250 gr. basterd suiker
185 ml zonnebloem olie
300 gr cakemeel of bloem
1 theelepel zout
2 theelepels bakpoeder
1 theelepel bicarbonaat(Kun je dit niet vinden, het kan ook zonder, netzo lekker!)
2 theelepels gemalen kaneel
400 gr. wortelen geschild en geraspt
55 gr. gepelde walnoten
Glazuur:
180 gr. zachte boter
250 gr poedersuiker
180 gr. roomkaas
3 druppeltjes vanille extract
Doen:
oven voorverwarmen op 180 graden. Bakvorm 24 cm insmeren met boter. Klop de eieren met suiker to romige massa en roer er dan olie door. Zeef bloem met bakpoeder en bicarbonaat en de kaneel. Voeg dit bij eimengsel en roer erdoorheen. Voeg wortelen en walnoten toe, snel mengen met electrische mixer. Spatel het beslag in bakvorm, bak ongeveer 1 uur. De taart moet fors zijn gerezen, laat iets afkoelen dan omkeren op bord. Terwijl taart in oven staat maak je het glazuur. Vermeng de boter met poedersuiker, eerst met houten lepel vervolgens met garde tot de massa stijf is, roer er dan snel de roomkaas en vanille extract door. Als de taart is afgekoeld, verdeel je het glazuur over de bovenkant. Het hoeft niet glad, piekjes staan leuk. KLAAR!!!
Soesjes tower.
I have no idea if you have these soesjes outside the Netherlands or not, but these came frozen(yes I am so lazy!) from the Liddle(store). When they are unfrozen you spray some whip cream on a plate and put a few of them on it. On them you spray some more whip cream and this way you build layers, really easy. When your done, you have the tower. Take some liquid chocolate and use how much you like on top of everything. more whip cream and some hazelnuts already sliced into small pieces. Done! So fast and so good!

i wish i could translate the recipe - carrot cake is my DH's favorite! I am not sure if we have soesjes - i have never heard of them - maybe a specialty store might have them although they sound sort of like funnel cake - really delish!

hi corinne,
bicarbonate is also called "zuiveringszout" and you can buy it at the pharmasist like Etos or DA and in English it is baking soda. I use it in my american cupcakes, it's a little extra!

nog lekkerder is als je een paar drupjes citroensap door het glazuur doet. maakt de taart net even wat frisser.
